This gives you enormous flexibility – you can bake dense sourdough bread at a high temperature in one deck, delicate sweet pastries in another, and switch off the third when you are not operating at full capacity.  2. Integrated prover beneath the oven The lower proving cabinet saves valuable space in the bakery. The dough rises directly beneath the oven, after which the baker can immediately load it into the heated chambers. There is no need for complicated tray transfers across the entire premises.  3. Individual umbrella steam injection Each deck has its own independent steam generator. The amount and timing of steam injection can be controlled separately for each chamber, which is essential for proper bread oven spring and for achieving a glossy crust on bread rolls.  4. Maximum modularity and scalability The Fornata Mini concept is designed to adapt to the growth of your bakery. If 3 decks are no longer sufficient in the future, the design allows you to add more decks without having to purchase an entirely new oven.  5.
